I now have a FISH brand eggette mould, and like Simon in the video, I bought it in Hong Kong. Now that I have a gas cooktop I would consider using my frying pan upside down so that the sides of the pan aren't in the way of rolling. On the other hand, I probably wouldn't do it because the bottom of my pan is really dirty, and it is not completely flat (it has the maker's stamp on it). Your metal tray could work if you could make it heat evenly, maybe by using it with something like a pizza stone?
